Protein Packed Avocado Toast

I am a latecomer to avocado and have only had it in a salad or on a cracker.  But this recipe may not seem like much is really, really good.  Its filling, tasty, high in protein and easy to make. I hope you try and let me know what you think.

 Protein Packed Avocado Toast

Ingredients:

1 Avocado

1 cup cooked Navy Beans (I use one can drained)

¼ Lemon (juiced)

¼ tsp Sea Salt

4 slices Bread, toasted

¼ cup Hemp Seeds (Optional)

Directions:

  1. In a bowl, mash the avocado, white beans, lemon juice and sea salt together with a fork.  Continue to mash until you get a guacamole-like consistency.
  2. Divide the avocado bean mixture onto the toast. Sprinkle with hemp seeds, tomatoes, peppers or whatever makes your stomach smile and enjoy!

Notes:

No White Beans: Use Chickpeas instead

Like it Spicy: add hot sauce or chili flakes into the avocado bean mixture.
