The weather is hot, hot, hot in Florida this time of year and no one wants to be standing over a hot stove or heating up the kitchen with the oven. This is a simple, yet healthy desert sure to fit the needs of your whole family – sweet yet not fattening. I look for simple, healthy and easy recipes that allow me to spend my time elsewhere – like the beach or the pool.
This fruit salad is made with simple ingredients that don’t turn mushy if left in the fridge overnight. Its versatility lends itself to fancy dinners and dinners cooked on the outdoor grill.
I serve it with ice cream, or on top of angel food cake or pound cake. If on top of cake I will take some of the raspberries and mash them to create a syrupy juice. I have served it with a dollop of whip cream or just bare naked when I need to satisfy that 10 pm sweet tooth. You can add any fruit like peaches, strawberries, bananas but keep in mind they tend to turn brown or get mushy quickly.
Easy to make, easy to keep fresh; this is a great ‘go to’ recipe any time of the year but especially during the summer.
Simple Summer Fruit Salad
Serves 6
Ingredients
Blueberries, 1 cup
Raspberries – 1 cup
Orange – 1 medium to large, cut in bite size pieces
Apples with skin on – 2 medium cut up in bite size pieces
Lemon Juice – 1 lemon
Pecan pieces, ¼ cup (Optional)
Honey, Agave or Truvia – sweeten to taste
Directions
Wash blueberries, raspberries and apples.
Cut apples into bite size pieces, and toss with the juice of one lemon
Peel and cut oranges into bite size pieces
Mix all ingredients into a bowl and chill for several hours.
Serve simply with whip cream and biscotti for a light summer desert.
