I have fond memories of this recipe. My mother-in-law did not have air conditioning in her home in Fort Myers, FL and the summer months were brutal. Not wanting to heat up the kitchen, Momo made Pork Surprises on her hibachi grill. They were simple to put together and grilled to perfection. You can also bake them in the oven if you choose.
Ingredients:
2 boneless pork loin chops (about 4 ounces)
2 slices of onion, ¼ inch thick
2 slices of green pepper about ½ inch thick or cut small pepper in half.
2 slices of tomato about ¼ inch thick
4 slices of bacon
2 slices of cheese – your choice
Salt & Pepper, 1/8 tsp each
Instructions:
Preheat grill
- Place two strips of bacon like an “X”
- Sprinkle pork chops with salt and pepper
- Place pork chops over bacon strips.
- Layer an onion slice, pepper slice, and tomato slice on each pork chop
- Wrap the bacon around the stack and secure with 1-2 toothpicks
- Lightly coat the grill with cooking oil and prepare the grill for indirect heat.
- Place the pork surprises on the grill and grill covered with medium heat for 20-25 minutes or until the thermometer read 160 degrees.
- Place cheese slices over the surprises, cover and grill 1 minute longer or until cheese melts.
To bake in oven, place in a shallow pan and bake at 425 degrees for 20-25 minutes. Add cheese and bake until melted.
