Carrot Souffle

Thanksgiving always makes me think of yummy, warm, delectable recipes that fill the home with sweet and savory aromas.  This does not disappoint.  Its an old family favorite.

Servings: 4-6

Ingredients:

1 lb. carrots, sliced and boiled in salted water

½ cup melted butter

1 cup sugar

3 Tbsp flour

1 tsp baking powder

1 tsp vanilla extract

3 eggs

Directions:

Cook carrots until tender in salted water

Melt butter

Blend butter and carrots in food processor

Add in sugar, flour baking powder, vanilla and eggs

Pour into greased casserole dish

Bake at 350 degrees for 40-45 minutes

Notes: 

This recipe can be doubled easily

I used only ¾ cup sugar as it is very sweet.

The casserole can be put together and refrigerated the day before serving.

    1. I cannot tell you how much I miss her! My larger than life, loving, caring cousin and friend. The memories I have of her keep my heart warm and fills me with her spirit which I hope I can impact some of which she gave to others. Yes, Susan, this recipe made me think of her. This was her birth month. But she got to celebrate it with her mom and dad and so I rest in peace with this knowledge. Stay well and keep her memory alive with all her memories she gave us. Blessings of health and wellness for the holidays and beyond.
