Happy Fall, Y’all!

When I think of Fall, I think of leaves turning into shades of auburn, brown and gold bringing about cool-breeze-sweater-weather.  And then I remember that I live in Central Florida where we won’t see or feel any of that until late November and December – if we are lucky.

Nevertheless, we celebrate Fall with the rest of our northern neighbors by changing out our door wreaths, adding fall colors to our indoor decorations and cooking meals that remind us of the upcoming seasons.

I find myself joyfully anticipating the beginning of the holiday seasons as I did as a child.  First with Fall, then building with Halloween and Thanksgiving, till we crescendo with Christmas!

All this leads me back to new possibilities in cooking.  And with Fall, I think of apples.  I like to keep my recipes simple and this one cannot be easier.  My mother in law, Momo, would cook this up and the entire house would smell warm and inviting.  And it’s not just for the Fall season as it can be served hot or cold, plain or with whip cream or over ice cream. It’s really an all season recipe.

Like I said, it’s just that when I think of apples…I think of Fall.

Red Hot Apples

Ingredients:

Apples

Red Hot Cinnamon Candies

Directions:

  • Peel, core and slice desired number of apples
  • Place apples in a large pan with enough water to just barely cover them.
  • Add a handful of Red Hot Cinnamon Candies and cook medium temperature on stove until apples are soft. The more red hot candies, the spicier the flavor.

Serve warm over ice cream or chilled by themselves.  YUM!
